Cucumber Salad

How to prepare a simple but utterly tasty cucumber salad.

Ingredients

  • 2 large cucumbers thinly sliced
  • 1 small red onion thinly sliced
  • ¼ cup rice vinegar or white wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar optional, for balance
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh dill chopped, optional
  • 1 teaspoon sesame seed for garnish, optional

Instructions

Prepare the Cucumbers

  • Wash and peel the cucumbers (if desired). Slice them thinly using a knife or a mandoline for uniform slices.

Slice the Onion

  • Peel and thinly slice the red onion. If you prefer a milder taste, soak the onion slices in cold water for 5 minutes, then drain.

Make the Dressing

  • In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and black pepper until well combined.

Combine Ingredients

  • In a large bowl, toss the cucumber slices and onion slices together. Pour the dressing over the vegetables and toss gently to coat evenly.

Add the Herbs & Garnish

  • Stir in chopped dill, if using. Sprinkle sesame seeds on top for extra flavor and texture.

Chill & Serve

  • Cover the salad and refrigerate for at least 15–20 minutes to allow flavors to meld. Serve cold as a refreshing side dish.

Notes

Tips:
For a creamier version, add 2–3 tablespoons of sour cream or Greek yogurt to the dressing.
Add cherry tomatoes or sliced radishes for extra color and crunch.
